Thanksgiving Day =-)

Today is the one day each year that we specifically set aside to be grateful.  Those of you who have followed along for awhile know that I am trying to be grateful on a daily basis… but today, we are ALL grateful (or at least we’re supposed to be!).  It’s Thanksgiving Day in the U.S. and not only do we get the day off from work, we get to enjoy big dinners (usually with turkey, mashed potatoes, green bean casserole, sweet potato casserole, pumpkin pie and more!) and time with family.  In a complete shift from the normal dinner that Thanksgiving would have, we decided to do something different around our house this year: pulled pork (that we make in the crockpot, so super easy!), mashed potatoes (that our 3 year old LOVES), and pumpkin cake with cream cheese frosting.  =-)  We’ll be enjoying time as a family with some good food, but we’ll also be celebrating – today is my hubby’s birthday.  Not only do we get to celebrate a holiday, we get to celebrate him.  It’s definitely going to be a good day!  =-)
